De-pulped 5 hours after being harvested, exposed to a long dry anaerobic fermentation of 27 hours and sun-dried slowly on raised beds to the ideal moisture content.

Farm Story
Norbey is a 50 years coffee growers who inherit his farm from his father 25 years ago. “The first 10 years were amazing” Norbey said, but after the coffee price dropped below the cost of production for the first time, Norbey knew only producing commercial coffee was not going to be sustainable. For this reason, he joined El Sena (Colombian Coffee School) to learn how to produce a high quality cup, fortunately for him, his farm is located at a very high altitude right next to a rainforest which even lower down the temperature a little bit more. 5 years ago Norbey planted 5000 Tabi trees and 3 years ago 3000 Pink Bourbon trees, the rest of Norbey’s farm is Caturra.
